Quinta do Vesuvio or
Quinta do VesuvioAbout This PortQuinta do Vesuvio is the name of the vineyard from where the grapes are sourced and is located in the Douro Valley. During vinification Quinta do Vesuvio undergoes fermentation with natural yeast at temperatures between 24oc and 28oc. The final blend is made in the time honoured traditional method of foot treading in granite 'lagares'.
After approximately forty eight hours, fortification with grape brandy takes place, arresting the fermentation at the desired degree of sweetness. Quinta do Vesuvio is matured in seasoned oak casks in the lodges of Vila Nova de Gaia for two years and is bottled, unfiltered, and cellared in Vila Nova de Gaia before being released.
Quinta do Vesuvio is unfiltered so throws a heavy sediment and requires decanting before drinking. When stored lying down in a cool, dark environment it will continue to mature and develop for many years
