About This Wine

The blend comprises of 78% Sémillon and 22% Sauvignon Blanc, the fruit all hasvested by hand and sorted before and after destemming on a vibrating table.

Following maceration on the skins and fermentation in oak barrels the wine is aged on the lees, with batonnage, for 8 - 10 months (15 - 30% of the barrels are renewed each year).
