Making Eiswein is a huge risk. The grapes have to be left on the vines and are only harvested when the when temperature is below -7° Celsius, freezing. This means that the juice inside of berries to solid ice and have to be pressed before they melt, this reduces 90 % of the normal harvest (quantity), but gibes the wine a concentrated "natural liqueurs".
