About This Wine

This wine is made from a blend of 85% Chardonnay and 15% Parellada. The vines are harvested, from the first week of September
onwards for the Chardonnay, and from about the third week of September for the Parellada, as this is a late flowering vine.

After pressing, the wine is fermented over a two week period, 70% in Fermented in temperature controlled stainless steel tanks and stored in French Limousin oak for six months.This gives a depth and complexity, before it is lightly fined and bottled.
